It isn't always easy to eat healthy while subsisting on a steady diet of Ramen noodles and pancake mix. While you try to make the best nutritional choices on a limited income, it isn't always easy coming up with creative new ways to serve up macaroni and cheese.

While most of your culinary choices might be modest, at least it doesn't have to be the same boring thing each night.

Easy to make, store and eat, pasta salad is almost as convenient as it is versatile. This is a basic layout, but be creative with whatever you can scrape up.

1 box (more or less if you want) Kraft Macaroni and Cheese
Italian dressing, to taste
Canned black olives, chopped or diced celery, cucumbers, carrots, peppers, tomatoes, mushrooms, frozen peas, corn, or whatever.

Boil the pasta, but DON'T add the cheese powder or butter. Chill the macaroni, then add in everything else. Add enough dressing to soak everything but not enough to drown the pasta. Store in the refrigerator. Be as creative as you like!
